This mixture of herbs and spices is the fruit of the ingenuity of those French who had to learn to survive in a foreign land. It is made of thyme, red onions, paprika, hot peppers, cumin and black pepper and makes a delicious stock for shellfish.

It is very aromatic, with spicy and hot notes.

- In a vinaigrette of oil, cider vinegar and honey on a salad of red beans, corn, red onions, peppers and diced bacon. - In sauces in traditional dishes, such as jambalayas (paella from Louisiana) and gumbos. - In a marinade for grilled meat.

The word "Cajun" comes from "Cadien" who are the descendants of the Acadians. Those French from New Scotland were sent in Lousiana because they refused to swear allegiance to the British crown.
